Food

Did anyone ever see the episode of Friends where Rachel is trying to bring up subjects that would hold Joey's attention? She suggests, "Sandwiches. Or my underwear." And Joey says, "I'm listening." Anyway, a subject that will always hold my attention is food. So today is a food post.

For Valentine's Day, I made something I have never made before. In fact, I kind of made it up. I'm sure people have made a variation of this, but I had never thought about it before. It was so easy, and Christian said, "Wow, this is like something you would get at the Copper Mill." (A semi-nice restaurant in Logan, Utah.) Anyway, I put 3 chicken breasts in a 9x9 pan (one each for me & Christian, and 1/2 each for the boys), sprinkled both of them with italian seasoning and garlic salt, then put spaghetti sauce on top of them and put them in the oven at 350 for 35 minutes. Then I put sliced mozzarella cheese on top of them and put them back in the oven for 10 more minutes. It smelled like an Italian restaurant in our home. Yum! Christian gave it rave reviews, and even BOTH boys ate it. I give it a 10 for ease and yumminess.

Then last night was girls' night out with some women from the ward. We went to Cafe Shi, an eclectic restaurant that serves all sorts of international food. I ordered the Steak Diane, which is described as "pan seared beef medallions sautéed with mushrooms and onions in a creamy dijon sauce. Served with lyonnaise potatoes." When it came, everyone looked at it and said, "I am going to order that next time." Don't you love it when that happens? And I ate every bite. And a salad. And I shared a chocolate torte with raspberry sauce with one of the girls. I ate a ton and laughed a ton. We have decided to make this a monthly activity. Of course, I forgot the camera. Maybe next time...

Mmm. Cafe Shi is one of the best places in town. I'm jealous of the girls' night out with those lovely ladies!
I got the crusted chicken with Israeli couscous one time, it was to die for.

Hey, I made your recipe last night (it is always fun when you don't have to think about what's for dinner) Anyway, it was really yummy! Thanks for the idea.
