I have gotten a few requests for my recipe (which is actually my mother's - thanks Mom!). Here you go.
I love this soup! And it only takes about 20 minutes to make, especially if the broccoli is already cut up into bite sized pieces.
Cream of Broccoli Soup
About 5 cups of water
1 head of broccoli
3-4 chicken bouillon cubes
About 2 cups milk
1/2 cup butter (no substitutes)
1/2 cup flour
1 cup cheddar cheese OR
1 can cheese whiz
Put the water, broccoli cut into small pieces, and bouillon cubes into a large pot. Boil until broccoli is cooked (about 10 minutes). Pour in the milk, turn heat down to medium and heat until the milk is warm.
In the meantime, melt the butter in a saucepan on medium-medium/high. Add the flour and stir it together. Let simmer while stirring frequently for 3-4 minutes. Stir butter/flour mixture into the broccoli water. Stir until somewhat thick. Add the cheese or cheese whiz. Use white pepper and seasoning salt to taste.
Edits as per my mom: I wouldn't use quite so much water-maybe 5 cups (you can always add more if the soup is too thick).
Use Velveeta instead of the cheese if you want to.
If the milk mixture is allowed to boil and you use real cheese it will curdle - bleck, so don't let it get too hot.

Don't forget that you can use half and half for half of the milk to make it extra creamy! (Your mom gave me that yummy tidbit.)

I will just vouch for this recipe even though have never had or made it. IF Vickie makes it.. IT IS GOOD PERIOD..
I have a similar recipe only it has several kinds of veggies and 2 cans cream of chicken soup. I'll email it to you if you want to try it.
