Macanoni and Cheese

(Yes, that's what my son calls it.)

Yesterday on Our Best Bites they posted a recipe for chicken and dumplings. Then they asked what our favorite comfort food is. I commented about how macaroni and cheese made from scratch is my favorite. This got me thinking about how yummy it really is, and how long it has been since I made it, so I made it for dinner last night! I got the recipe way back in 2002 off of ksl.com, and I just love it. Here's the recipe: (no picture, but don't you all know how mac & cheese looks?)

Mom's Macaroni and Cheese

2 cups elbow macaroni (7 oz)
2 Tbsp butter
1 clove minced garlic (optional)
3 Tbsp flour
3/4 tsp salt
1/2 tsp dry mustard
2 1/2 cups milk
2 1/2 cups shredded sharp cheddar cheese

Cook macaroni according to package directions. Set aside.

Melt butter in medium saucepan, add minced garlic and sauté. Stir in flour, salt and dry mustard. Cook 1 minute. Gradually whisk in milk. Bring to a boil, stirring frequently. Remove from heat and stir in 2 cups shredded cheese and drained cooked macaroni.

Place in a 9 inch baking dish and sprinkle with remaining 1/2 cup cheese. Bake uncovered at 400 degrees for 10-20 minutes or until hot and bubbly.

To reduce fat, use low-fat or fat-free milk and reduced fat cheese (but who in the world would want low fat mac & cheese???)

Eating this macaroni and cheese brings me back...

My sister and I loved spending time at our best friends' house. Amy and Lindsay were sisters, and exactly the same ages as we were. One day, we came home raving about how good their mom's macaroni and cheese was and begging our mom to make it for us. She slaved over a hot stove, making from-scratch macaroni and cheese. One bite and we both said, "YUCK! This isn't the same stuff that Amy and Lindsay's mom made!" We were so adamant that my mom called their mom and asked her for her recipe. She replied, "I just use Kraft macaroni and cheese from a box." Apparently, neither my sister nor I were food snobs back then. Kraft suited us just fine.

P.S. Ethan, my 5 year old, LOVED the homemade stuff, but Aidan (my 3 year old) wouldn't even touch it.

So funny. I hated hated hated Mac and cheese growing up because my mom made the stuff from a box. Then one day I had real mac and cheese and I saw the light.

Brooke, our family favorite growing up was what we called "Yellow Dinner"...it looks awfully bland, but it tastes TO good. Its homemade MacNCheese, Corn, Cornbread, and apricot jam for the corn bread. Of course these days I look at that and see a carb fest, but I do miss that dinner. If you're not counting carbs, then go for it, you can't go wrong. If you HAVE to have some color, serve peas instead of corn. It looks prettier.

I'm not kidding, just 2 days ago, I was wishing that I had a recipe for homemade mac & cheese. Thank you. I will be making this tonight because I too have many fond memories of it. The real kind, not the from the box kind.

OH, and I forgot to say, MacNCheese ( the homemade, baked in the oven kind) is my number 2 fave comfort food following pie. Of which I only like two kinds...Hot, and Cold. I could eat almost an entire pan of macncheese, which I why I haven't made it in over 3 years. :(

Confession time--I have never made homemade mac and cheese (collective gasp....I know)--so I'm thinking that I may be inspired by this little recipe and will have to give it a shot. Now, this particular recipe has no fat and carbs, right? Okay, that's what I thought--just checking!

Brooke, I made it with chicken strips dipped in honey. It's kind of like a yellow meal. Kind of.

Octamom, it definitely doesn't have carbs, as long as you eat it when no one is looking!

It wasn't until I was out of college did I know that people baked macaroni and cheese. We always had the stovetop kind.

my brother's girlfriend makes the best homemade mac n cheese! mmmmmm.
when i was growing up i would only eat the golden grain brand. i still love it, even though it's the powdered kind. ;)

I haven't had home made mac and cheese. It sounds yummy! I love the shape macaroni. It's the only stuff I'll eat. I don't know why.. but it just tastes better. Maybe because it holds more cheese?

Mmmm. Homemade mac-n-cheese is also one of my faves. My mom never even made the box stuff growing up. I'm not sure where I discovered Kraft.
My mom worked full-time, but somehow we missed out on the frozen pizzas and boxed meals. Somehow I still learned to love processed food, though. She did make fried chicken and fried burritos, though, so I didn't miss out on unhealthy stuff. Now both my parents are health-nuts, and would only rarely fry anything. Funny how life changes.

Thanks for the recipe! I'll have to try it, since Louie's not a huge fan of my family's version. Yum!

Your mom must have really really loved you both to make mac & cheese from scratch.

I don't think I remember even seeing Kraft in the store up until that point.

I als don't recall making processed foods when you were growing up so that never crossed my mind when you asked.

You are way too good! I don't think I'd ever make home made mac and cheese!!! my kids would probaly say, I like the box kind better!! my son is the kind of kid that eats 7 foods at that is it!!

I made this recipe last night, and it was a huge hit! I used a mixture of cheddar, parmesan, and colby-jack cheese.
I was worried about the soupiness right out of the oven, but alas, I should have had more faith. It coagulated just as it should in a few minutes. Coagulate isn't an appetizing word...but the mac was delicioso! We all made yummy noises. Thanks!

Made this for dinner tonight. (With pulled pork sandwiches...for Brooke) and it was way yummy! I find most of the recipes I've tried before were too dry but this was perfect and creamy. Thanks for sharing the recipe for one of my most fav comfort foods!
