The Plight of the Zucchini Bread

We planted a few seeds early this summer: squash, pumpkin, zucchini, and a couple of sunflowers. The squirrels in our rock wall ate the sunflowers as they were just beginning to sprout through the soil. The others seemed to be taking an extraordinarily long time to grow, and they would flower sometimes, but not turn into fruit. We figured out about three weeks ago that the sprinkler that should have been hitting them had been turned off by the HOA landscapers. Therefore, they had only been getting mist from another set of sprinklers (and therefore enough water to not die, but not enough to actually do anything). So we turned the sprinkler back on, and to make a short story long, we finally got the zucchini plant to grow a zucchini. A zucchini, as in one. We lovingly cared for it and excitedly watched it grow.

Yesterday we picked the fruit of our labors and brought it in the house to make zucchini bread.

I have made this recipe many times before. I have no idea what made me forget the "and flour" part of the recipe. I greased, but I did not flour the pans.

Here's the recipe for the icing. It came out of my mom's head, because she's brilliant in the kitchen. If you need a recipe for the bread, e-mail me. (I know it looks extra delicious, especially in that second picture. But I promise it really is good.)

1 1/2 Tbsp milk
1 Tbsp butter, softened
1 1/4 cup powdered sugar
1 Tbsp lemon juice
1/2 tsp rind

Mix together. Drizzle over zucchini bread.

Ooh-I love zucchini bread. Have you ever eaten it with a slice of cheddar cheese? So good.

Oh, I see I won't be the first to say "I LOVE zucchini bread!!" :)

That icing sounds delicious. Maybe I'll try it next time I make it. But that would probably require leaving out the chocolate chips. Hmmm. I'll have to think about that for a while. . .

My coworker has been bringing in this chocolate zuchini bread in, and it tastes just like moist chocolate cake. So good!

Yum! I had 2 zucchini plants this year, and only got 3 zucchinis. The squash beetles totally destroyed my plants. Stupid bugs.

Yum! And all our zucchini plants died, too, from what you ask? Lack of water, of course! But it wasn't the HOA's fault - just mine!

I think you are the FIRST person I have ever known to get just ONE zucchini. Usually every one is ditching them on the doorsteps by now...... yum for bread

Oh how I love zucchini bread! I should make some, I have 3-4 in my fridge right now from our garden of the house we're buying! We close next Tuesday. And I have a billion tomatoes there too. I'm gonna have to make salsa! Come visit and we can have zucchini bread and salsa! (not mixed though, of course)

Yum. Dude, you MUST try the Pam w/flour. You'll never have to grease and flour again! I've used it on cakes, muffins, breads - everything comes right out of the pan.

Zucchini bread is the only way I've been able to get my four year old to consume a vegetable.

I love zucchini bread! I've never tried it with icing, I think I will now.

Mmmm zucchini bread! I always forget to actually grease and flour the pans as well. I try to get away with just Pamming them but because I hate greasing and flouring... it never works. I've never thought about icing it! I'll have to give it a try.

Yay for you! One zucchini is better than none. I planted hollyhock seeds a couple of years ago from seed and only got three plants--they are all white. Bummer. BUT, it's better than nothing.
