I made these lemon blueberry muffins (which are from scratch, which I have never done before). They were really good. I would add lemon juice to the actual muffins next time, instead of just on top afterward, because I like a little more lemon flavor.
I made these butter flavored Crisco chocolate chip cookies. They were yummy. Too yummy. I ate way more than my share.
I made fry bread, using a recipe I got from a friend when I lived in Orem. We made Navajo tacos with half of them (using taco meat, cheese, refried beans, spinach, ranch dressing, salsa, etc), and then we made honey butter and had dessert with the other half. Yummy! Here's the recipe:
1/2 tsp salt
1/2 cup milk
4 tsp baking powder
1 cup hot water
2 1/2 cups flour
Mix together and knead well. Take a little piece of dough and thin it out until about 1/4 to 1/2 inch thick. Then fry in 365 degree oil for about 15-30 seconds on each side or until light brown. Then put on paper towels to drain excess oil.
And the last thing I made (I know! My goal was to do three recipes and I made four!) was Rachael Ray's "make this and get proposed to" Spaghetti Carbonara. While it was good, it wasn't as delicious as I had anticipated. I mean, I followed the recipe exactly, besides using garlic from a jar (instead of fresh), 1/8 tsp red pepper flakes instead of 1 tsp, apple juice instead of white wine, and parmesan instead of romano. I just don't get why it didn't taste as good as I had hoped??
So anyway, it was a really good week at our house food-wise. I will definitely have to do this more often.
I haven't decided what I am going to do this week. Actually, maybe I will make the goal to clean out the kids' playroom - because we are going to turn it into the nursery. So the kids' toys will be in their bedroom and I need to clean the playroom walls, etc. Good goal, Erin!
Come back Monday to check out my speaking-too-softly-feeling-a-little-self-conscious vlog!

Awesome! I have a bunch of blueberries and nothing to do with them, so I'll have to try the muffins.
Love fry bread. Or scones, as I like to call them.
Why did you post the recipe to fry bread?!?!? Now I'm going to want to make it.
Sounds like some yumminess! I'm trying a new recipe tonight- Penne Pasta with Procuitto and Parmesan. I hope it's a winner! And yes- it will kick my diet's butt.
I'm going to have to try those muffins. They sound delicious. I love making fry bread(we call them scones too). My family makes them when we get together. So good.
I've been craving scones!!! I'll have to make that recipe-yum!
Whenever we drive through Oklahoma, we pick up kits for Fry bread. It's the BEST. I'm craving it now.
those are my all time favorite Choc chip cookie! I make them all the time and they are the best!
Wow! You are the cooking queen!!! I always think Rachael Ray's recipes are hit or miss. I have a few I love and a few I've made that were, Meh.
I want some blueberry lemon muffins now! (my favorite combo!)
You have sparked my appetite for Navajo tacos. Yummmm!!!
It's been difficult around my house food wise because my husband has decided to no longer eat meat with the exception of fish.
Don't worry. I did Rachel Ray's bolognese which is an almost identical recipe and I followed it to the "T", including the fresh garlic, wine, and full amount of red pepper. It came out good but it didn't knock my socks off, either. But it was easy and still better than anything from a jar, so that's all right.
so productive! i am jealous and feel guilty all at the same time
Do you deliver?
We had navajo tacos this weekend too! Only, I cheated and used rhodes roll dough for the bread. Still good!
Have you been to realmomkitchen.com? It's one of my favorite recipe sites. Just thought I'd share!
I too love those Crisco chocolate chip cookies. I haven't made them in awhile--looks like next time I am going to the store--I am buying Crisco and chocolate chips!
I make this using Bisquick (or rather homemade Bisquick b/c I'm cheap like that) and milk. I knead then fry up like suggested. Mmmm Good!
