Two Things I am in Love With Right Now

#1 This recipe. I looked it up because I had a huge container of spinach we purchased at Costco (which, of course, when steamed turned into a teeny, tiny amount). I read the reviews and made a couple of changes, the biggest of which was turning it into two quiches instead of one (because there is enough stuff to make two, without even adding any more ingredients). So the best part is that we finished off one quiche last night for dinner, and voilà! I already have another quiche in the fridge for dinner tonight. Even both boys gobbled it down last night. No wonder over 1100 people have rated it 4 1/2 stars on allrecipes. Go print the recipe off right now.

# 2 This book.

I happened to see it at the library a couple of days ago, and I knew nothing about Edith Wharton, or her writings. I am now excited to read some of her work. She was an intellectual and a bit of a feminist in the late 1800s, when being so was frowned upon. I love love love it.

Things I Don't Love So Much Right Now:
-strep throat. Particularly, a husband who has strep throat. I'm hoping it bypasses the rest of the family.
-a baby who slept little, and cried much, until 3:00 in the morning. (I love the baby, I just don't love the lack of sleep.) This morning, however, she is her bright and cheery self. I, on the other hand, am tired and irritable.
-a filthy kitchen, which I am ignoring because I want to read the above mentioned book and because of the above mentioned sickness. Oh brother, let me tell the truth - it's because I am lazy.


At my kids' school, they aren't allowed to pinch, only poke. In my opinion, that takes away from the excitement of St. Patrick's Day. Although I can see why the school would make that decision. My boys are decked out in numerous shades of green today.

I'm not wearing green. You are welcome to come over to my house and pinch me. (Or poke me. Whatever.)

I told my kids (bleary eyed and packing lunch) that they can't pinch me cause I have green eyes. It worked...till I could get my St patty day shirt one! Can't wait to try the quiche!

I'm kind of a fan of the poking idea...mostly cuz I hate being pinched. And I hate St. Patrick;s Day. But I'm still wearing green cuz I don't want to be poked or pinched.

I hate strep throat - hope everyone gets feeling better.

We aren't irish, so I am not wearing green, nor did I send Chloee to school in green. We're rebels like that.

And really, I prefer a good goosing over a pinch or poke if we are being honest

I am SO making that. I'll have to figure out a crust because I don't really do pie crusts (maybe I should try?) but I will definitely be making the quiche. You know spinach is my favorite food, right? I adore it.

Steer clear of the husband and stay healthy! :) Hope you get more sleep tonight.

I asked my kids, and they said they're allowed to pinch. Who's Ethan's incredibly controlling teacher?

You must have known to post about using up spinach today. I just ate a salad today for lunch using my costco spinach and wondering to myself how I was going to use it all up before it goes bad. Nobody else in the family will eat spinach salads with me :( I definitely printed off the recipe and will be making this soon. It looks very delightful!!

I am in desperate need to get a little crazier with my dinners. The oatmeal and grilled cheese sandwiches just aren't cutting it anymore. I will be making that quiche this week. It looks delicious! Janae

I just dressed my kids in green so they wouldn't end up with emotional scars and yet something else to hold over my head later in life.

Ah! Just read that you are a francophile! I am une Francophone! See how much we have in common. We could totally write to each other only in French and then everybody would be all: WTF? I'm on the wrong blog? Where's Erin?
As for the pinching and poking, well, I think poking is construed as politically incorrect in some circles...

I just don't enjoy pie crust (ironic, since my post today is a pie recipe) and tend to scrap out the filling. Do you love your crust?

I made the quiche last night for dinner (and am currently eating the leftovers for lunch). Thanks for the recipe. It was delish, both my husband and I loved it.
